Ingrediets: 1 banana, 2 eggs, dessicated coconut (to taste), cinnamon (to taste), coconut oil, blueberries
Method: Cut the banana into little pieces and put in the microwave for about a minute (this will make it all mushy and easier to work with). In a bowl, press the banana pieces with a spoon until they form a paste (this should be relatively easy now!). Add in the eggs, dessicated coconut and cinnamon and mix them together. Add the blueberries to the mix.
In a pan, heat the coconut oil until it melts. Spoon the mix in the pan and let them cook as much as you want. Flip on the other side. I made small pancakes as they’re easier to flip, each pancake was made from about a spoon of the mixture.
Place on a plate and top them with what you want (fruits, nuts, almond butter etc). I topped them with raw organic honey.
